Language and data

Hello,
So I am curious about the in-game language. It seems like I can set it in my Switch's settings before starting up ACNH. I am currently playing in Japanese (I have the Japan version of AC), but would like to switch to English at times too. If I play in English, would I miss out on Japan exclusive items and such? Are there any Japan exclusive items? I know New Leaf had them, so I got the Japan version of NL as well. It seems NH basically has the same stuff for everyone though. I hope this is true.

Also, is it possible to transfer all of your AC data to a new Switch? Is the game data stored on the cartridge? Will I mess things up?

I can't answer all of your questions, but it seems like all games will have the same events/items, as the games aren't region locked. I have an American switch, but live in Japan (so i have the "Japanese" version of the game), but I play the game in English.
