First of all, sorry if this is in the wrong place, or if it has been asked before!

I've seen people saying they have sold or purchased villagers for a certain amount. How does that work?? As far as I knew, a villager just packed up and left and another random villager would turn up a little while later

Here on the forums we do things involving others when our villagers leave.

We either give them away, auction them, or sell them.

All of them use the friend code system. When a villager is in boxes, you can invite someone to your town to collect that villager so that they move into their town. To do this, you add their friend code, go to the train station, and open the gates. To go to someone else's town to receive a villager, you do the same except you select visit another town.

The way selling/auctioning villagers works, is that you use your in-game bells and people place bids.

Someone will put something up for sale, like a villager, and people place bids on them. When time in the auction runs out, or the 'highest bid' is reached (if applicable), then someone will go over to the person who started the auction's town and talk to the villager. The villager will then show up in the persons town soon. Oh, and they drop the money!

I hope this helps? :3

it's a great way to get villagers that you might not easily find in your campsite. You can get them for free from people doing cycling villages too sometimes. Or if you have a friend who wants to loose a particular villager that you want, visit them when they are in boxes. :)
