what edibles did you make today?

My parents used to go shopping in the States and they would get Cookie Crisp, however I haven't had any in years... So I made my own!

The texture is great, it's crispy but once you put it with milk it melts in your mouth. Tastes pretty good, too!

yesterday i made a vegetable pasta bake with fried courgette, leeks, mushrooms, roast garlic, onions, red pepper, butternut squash and carrots. also made a tomato sauce and put some pieces of mozzarella in amongst the pasta.

i overdid the amount of pasta the first time around and shall make a smaller version later : ]

I don't think I ever shared it, but I made tomato soup. Most tomato soup I've seen is just tomatoes, but I found one that used garlic and carrots and then pureed it all. And it was amazing. The carrots and tomatoes were from my garden. I ripped out my tomato plants and I didn't want to have a ton of tomatoes lying around so I made soup with them! Some of the tomatoes were so meaty!

I made pumpkin soup today! I usually hate cooking, but pumpkin soup is always so delicious that I actually started making it feeling excited. Sadly my feelings toward preparing food returned to normal very soon. The soup turned out great though.
 
I made homemade applesauce! It was actually really easy and fun to alter and add things to! I just kept it simple with apples, water, sugar, and cinnamon for my first time.

6 apples - cored, peeled and cubed
1 cup of water
4 tablespoons of sugar
Dash of cinnamon

And you just boil it on the stovetop til it gets soft and either mash or immersion blender it (what I did).

I'm very curious if I can lower the sugar level and see how it tastes. I'll try 2 tablespoons next time and see how that goes. Adding nutmeg or cloves would be nice to try too. Or go to bulk barn and splurge on cardamom.
 
Some things I made recently in my culinary class:
- confetti cookies
- apple cinnamon scones
- apple fritter muffins
- dinner rolls... so... many... dinner rolls...
- sandwich bread

Those are all I can remember, there are lots of events that we cater for in December so it's mostly been prep work these past couple of weeks.

Made this very green cake for my niece a couple months ago. It was lemon cake with vanilla frosting. No idea if it tasted good or not, I didn't get to try any. But it was nice to practice piping! I wanted to do more decoration but I ran out of time

And I made the most amazing, perfect, 10/10 vanilla confetti cupcakes about a week ago.. Honestly can't believe I made them. I was skeptical about the recipe but dang, I highly recommend this vanilla cupcake recipe !! They say not to make it confetti but I added sprinkles to the batter anyway and it still worked out

I tried 1 tablespoon of sugar actually and it tasted perfectly fine!
