Trash them. I kept most in WW but really can't be bothered on NL, seem to get so much mail and box is always flashing at me haha. I did try to at least keep the leaving messages of villagers but after I accidentally deleted a few I gave up on that plan psha.

I haven't saved any letters. In fact, I don't usually even read my letters. I just read as much as I can while tapping B to close the letter. I do wish I had saved all the goodbye letters, even if only to keep track of everyone who has been in town

I saved most of my letters when I started playing the game, but now I just toss away most of them except for the very special and friendly letters.
Also, it's pretty handy to have a few letters on you as it's a way you can have a few more inventory slots for convenience. You can drag your tools to the empty letters and take it out when you need it. I've been using Maple and Kiki's letters for that ^^.

I save letters that have unorderables in them and do not want to store them in lockers, like the presents from the post office for instance.

I save goodbye letters and also post office and HHA awards.
I think I have one or two letters from villagers that were too perfect for their characters that I just had to keep them. Like Julian (my Blue pegasus representative) telling me I should show the world a new and enchanting side of myself and attaching the Stache and Glasses to it. xD What even, Julian?

I wish I could be bothered to save mine, but I toss almost every one away. I have 5 special ones in my letters slot in my pockets, I switch them out from time to time. I don't really like getting mail from 'mom', I find it a bit weird personally, so I chuck all hers away

If you go to the post office and talk to Pelly, choose 'Save Letter' and you can drag letters from your pockets into a save box and store them there. You can also attach items to the letters too and use it for extra storage space ^^

I only save some of the letters I get from my mum/dad & goodbye letters from villagers I liked.
I save anything that is cute or funny. And most of the goodbye letters. My very favorites are the 5 I keep in my pocket to store my tools in. I also have 4 characters now, and I save the cute ones each gets, so I guess that's a lot of letters between all of them. I have to say, Sparro sends some pretty funny ones. He's the most memorable writer.
There are letters I deleted because they weren't cute or funny, that I now regret. For example, I wish I'd kept my first HHA letter, or my first Wishy the Star, Katie...etc. Just for memories sake. But oh well. They should have written cuter stuff! XD
It's a little annoying saving them all though, because on my mayor it's actually 6 slots I use for tools, and also one more slot taken up by an old time capsule I'm hoarding because I'm a crazy completionist. Anyway, on my mayor that only leaves 3! open slots for getting new mail. But I'm at a point in the game now where I don't get a lot of mail, so it's not that big of a deal. But if I ever need to order a set or something for someone else, I have to clean out my mail slots by moving them to the post office first...it's all kind of a hassle.
But I love to re-read those letters in my pocket all the time. Especially the ones from villagers I loved but I let them leave to make room for others. It makes me feel less guilty that I held on to their letters, and I still think of them often. Even the ones at the post office--occasionally I actually do go back and re-read them...I've bff'ed all but 1 of the villagers that has ever lived in my town, so they're pretty meaningful letters.
