For a cataloging shop I’d say that’s a matter of opinion. The imperial, antique, rattan, and cute sets in all the colors are obviously very popular, being basically the only functional sets in the game. The color variants of the premium Nook’s Cranny items (kitchen island, elaborate kimono stand, whirlpool bath, etc.) are also highly sought after. But because of that, I can think of five cataloging shops off the top of my head, just on this forum, that offer all of those already.
If you’re trying to help people who want specific sets to decorate their houses, that’s probably the way to go. But if you wanted to help people who are looking for 100% catalog completion, offering all the color variants in a less popular set could be a cool niche idea. That’s probably what I would do if I wasn’t too lazy lmao.

People are looking for those simple panels. A lot of popular island showcases feature them! They are quite versatile on adding customised decorations to your island. (You just need to have the right custom pattern for it though.)

As a completionist, getting all the color variations is really helpful.
I've had a few friends who are collecting all the game room furniture
Also I agree with looking for themes (kitchen stuff, beach stuff, school, library, playroom, etc)
A lot of people like the grand piano/elaborate kimono stand
But most of what I've had to grab for people are a lot of matching colors within themes, since that's what people like to decorate with.
So bathroom items, kitchen items, that kind of thing
And if they want a whirlpool bath in black, they're probably going to have other black bathroom items in black on their wishlist too.
Catalog completionists will try to get anything they don't have lol
