I'm always worried when I return to my Animal Crossing game after being away from it for a long time. I just hope that when I get on one of my villagers haven't moved out.

I wish I can finally get the Bob Amiibo card so I don't have to worry about him leaving. Same thing for Lucky as well, but I haven't been able to find that series of cards in stores. So that's a shame.
 
If you want to absolutely ensure that none of your villagers move away when you take a break, keep a log of your last play date and time and just time travel back to that specific date and time when you decide to return to the game. There is no chance of a villager moving away using this method because the game recognizes it as the same day.

That said, if you aren't comfortable with time travel, I don't know what to tell you. That's the risk you run going the traditional route, and part of the reason I started time traveling anyway. The day-to-day nature of Animal Crossing games can be a real double-edged sword.

I have the Bob amiibo card. If he moves out, just tell me and I'll move him into my town so you can have him. :)

I don't think that will work? If I'm correct, you can only get an amiibo villager again after they move out of your town if you actually own the amiibo card and scan it in yourself. Otherwise you would still need to go through the traditional 16 villager cycle.
 
Tip: quit playing on a day when you have denied a villager's request to move out. Then you can take as long of a break as you want and no one will have moved next time you start up your game, even if it's months later (I say from experience lool I take super long hiatuses from NL)

even knowing this works I get a little paranoid about my villagers too hahah I have Pietro's card in the event of disaster.

This is correct. Unless you have Bob yourself you will have to wait for 16 villagers to move out of your town until you can adopt him from someone else, excluding if you use the amiibo card on your own.

However, I recommend just buying his individual card off Ebay/Amazon (for a popular villager like that you could expect to spend 10-20 dollars I would think), but it's much easier than buying lots of random packs and maybe getting Bob. I've bought a silly amount of cards hoping to see Lucky and I've never seen him yet. :/ (Of course, I want to complete the collection so it doesn't bother me to buy many cards.) I've also noticed that cards have not popped up physically in stores for quite a bit now (Toys R Us used to have them all the time where I lived, but no more). Prices are also escalating online for packs/individuals, so if you are going to buy amiibo cards I would do so now. I worry they may become impossible to find soon (like the WA/Sanrio ones already are)...
