So I decided to jump on the quarry bandwagon

But I read you can’t have more than 3 rocks in a grid, this should work right? it doesn’t matter that they’re on an hill or anything?

Here's some detailed instructions about how rocks spawn, perhaps that will answer your question.

 
From what I've heard, that should technically work since it's divided between 2 acres
 
it doesn't matter that its on a hill, rocks will span at all levels aside from the topmost one.

it should work and good luck! post pics after if you like - this level of design dedication is always so fun to look at
 
Not sure if you know this, but there's a "Stone" recipe you could use, instead of waiting for natural rocks to spawn.
