Timing on rare fish?

When is the ideal time to reel in on rare fish? I assume you want to hit A as soon as they latch on but I feel like I do real fast and they still buzz off.

I've heard that some people use the volume, not the animation, to gauge when to real in the fish. So like they close their eyes and click when they hear it go under. I don't know if it really helps timing, but I can attest that I feel quicker when I do it
