Set new goals. Find new things to work towards. Tear down everything if you must. Or just relax.

In Animal Crossing, you decide when it ends. As long as you find new things to enjoy, you never truly can "complete" the game.
 
I’ve only time travelled to get villagers out and even while doing that I never check the shops so I have something “new” to look forward to everyday. That being said my island is in a sense complete but it’ll never truly be done. There are plenty of areas that can be improved or I’ll eventually get tired of and completely demolish but I need new items! I’m the kind of person where as soon as inspiration strikes I have to do it! Almost every little section on my island I had the idea and completed it within 2-3 days sometimes even a couple hours if I already had the items ( this only truly began happening about 3 weeks into the game tho after unlocking terraforming and what not). But yeah day to day is all about the fish/bugs, checking the shops, getting items or diys for friends, and befriending villagers!
 
I'm not even close to the situation you described in the OP, but for me a lot of the fun of AC is trading and sharing. In New Leaf, once I had everything more or less "completed" I spent a lot of time doing giveaways (I would let people on my island for region-exclusive events and items) and that was just as much fun as the single player collecting/designing/decorating. So I can't wait to get to that point in NH too.
 
If you ever been on those haunted attractions during Halloween where the actors chase you. That.

Invite players onto my island where they must avoid getting caught and win goodies.

Or I start a cult and we line up together to visit other islands while host has no idea we're in cahoots. (it will be a matchy fashion cult, no harm done)

Can you imagine opening your island for visitors and 3 magical girl poopheads appear. Amazing. That's my dream.
 
Time travel doesn't give you a perfectly decorated and terraformed island all at once. I TT a LOT and i have like 258 hours in the game, im constantly changing and designing my island. A lot of people think TT are "completionists" but really, most of us just want our bridges, inclines, and houses moved faster so we can decorate easily. :)
That's the reason why I time travel too. Alot of times I'm too lazy to time travel. lol
 
I hadn’t completed the game yet, but if I do, I’ll just enjoy the game just like when I finished everything in NL.
 
edit to add that i don’t time travel except to move villagers in/out or move buildings faster!

so while i do consider my island a constant work in progress due to eventual updates adding content, you could technically call my island “finished” because i’ve filled all the space on it with areas that look and feel mostly polished and most of the areas i’ve done will remain as what they are until something comes along to change or update them with.

now that said, i don’t feel like i’ll ever be bored or feel like “ok i’m done time to put the game down and move on i’ve won” because personally i feel like there will always be something i can rework or improve upon. i’m already thinking about moving one of my island features to the beach and doing something new with the area it was in. there’s a cliff that had a bonfire with stools around it which i’m now wanting to expand and change into a bandstand. i feel like the more items i get and the more things are added with updates the more i’ll become inspired to rework my areas and make them even better!

in the meantime when there isn’t something i’m reworking i do really enjoy the peacefulness of being able to log on in the morning, run around and say hi to all my villagers and see who’s crafting, check the shops, dig up fossils, break rocks, find the message bottle, check my money trees and find the new glowing spot, see what flowers have cloned, dig up the flowers that have sprouted along my forest trails (i call this trail maintenance), etc etc etc. i feel like there’s enough fun routine things to keep me happy and busy for a bit until i decide that’s all for today and go about my real life day. as much as i love having projects, i also love being able to enjoy my “finished” town and just sort of “live in it” as well!
 
Sit back and enjoy it, invite people over, maybe do giveaways, maybe do redecorating, login for events and stuff, try to get every animal and bug statue.

I only trade for specific furniture I want and stuff because considering you only get 3 items daily in the shop, I think it will take months and months and I would get super demotivated if I just had to keep waiting to do things I wanted to do, that's not playing the game having fun its called getting depressed watching days go by as you can't do the things you want because you just don't have the specific furniture in the specific color you need.

I only TT to get my dream villagers in and nothing else as it ruins the game cuz I like doing tiny bits at a time and not doing a huge chunk at a time as I get so bored quickly from long tedious tasks.
 
"Everything," especially in a game like this, is subjective. For me, it's acquiring ALL the recipes naturally.
 
If I complete all of that, then I'm done with the game. However that is exactly the reason why I don't TT, because completing the game in 2 months is sad and overwhelming (for me). First of all, if I was not quarantined and at home 24/7, I definitely would not have so many hours in the game, and I definitely would not have the time to TT at all. Secondly, who wants to complete the game in 2 months?? It took me around 4 years to finish my New Leaf town and catch all the bugs, fish, and fossils, and I really enjoyed it taking so long! Sometimes its great to step away for a while, and then come back with new ideas and new excitement to start playing the game again. I'm content with how my island is going rn, and while it is about 60% "complete" I am in no hurry to finish the undeveloped areas, and while some of my island is done, I am open to changing things up if new buildings come. So anyways what I'm trying to say is, there is no way I would ever put myself in that situation. (But I totally respect those who do this! It's ur game and ur decision, I'm just trying to say that it would be extremely overwhelming for me personally uwu)

However if I was in your shoes, I would probably restart or get a second island (although that is harder to do now than it was in NL). But I think I would want to save my island somehow, so maybe I would step away and wait for a dream address update? No telling how long that would take, but if you completed all of that in 2 months I would definitely take a break for a while. Or in the mean time I would take a bunch of pictures and post them online and try to get in one of those island tour videos on YouTube lol.
 
I have over 600 hours in New Horizons atm, and have only all fossils and all hybrids. Working on my collection of K.K songs, Still working on my island, still searching for celeste diy.

It's gonna be a while before I even do anything in the original post, and even then I could always go for all villager photos.
 
I don't know. We're supposed to get updates for a long time, so I suppose it's likelier I'll be done a long, long time before I'm finished. :( I'm already 650 hours in, and that's with slowing down the last few weeks (nothing to do with coronavirus, I'm disabled and always play AC like this - in older games I just began TTing, and that was heavenly to me. Don't know if I'll ever have that experience with ACNH).

I enjoy making rooms in Harv's Island. If we get more furniture, I can see myself doing that and dressing up villagers a lot.

I also love hanging out with the villagers (it's one of my favourite parts of the game). If they add depth to those features, I might hang out with my villagers sometime. In previous games, once I was done, I was done, because of the fear of turning on my game and seeing somebody had left and/or moved in. That's not an issue any more, so I'll be able to come back.

There's always terraforming, can make a really ambitious island or something. It's unlikely I'll do that until I'm finished, if only because I'm attached to how my island currently is.

If they have minigames and things, I might play those with my partner. I might trade online, help newer players, just hang out on forums until we get another AC. By the time I'm finished, I imagine a lot of players will be, so maybe things like roleplaying, mafia, etc. will be big again, on forums and in game. Maybe go back to playing a different AC game. I'd like to say I'd get another copy of the game, but, well... My save file will always be precious, especially a finished one, and it's one per Switch, so I guess I won't play the game again. ¯\_(ツ)_/¯
 
I mean, if I'm done the game 100% (which I guess could be defined for me as all fish/bugs/art/fossils/Nook Miles achievements, full catalog, etc) and my island is fully decorated the way I want it, then I would just stop playing daily. I would only play when my friends want to play or when there are new updates that introduce new events or items or whatever else or maybe even just play briefly in order to help somebody on the forums, it's as simple as that. I don't mind it, that's the way things go. It's hard to play any game for a really long time without getting bored of it and moving on, regardless of whether or not you completed it fully. Sometimes you revisit those games months or years later, but often times you don't, and that's okay! I'd be happy with the fact I did manage to 100% it (since I haven't done that with any of the previous entries in the series) and happy I played it for as long as I did.
 
Time travel and let people catch fish and bugs. I just recently went through a reset because town center was two tiles off, but even in that town I just invited people over to catch arapaima and saddled bichirs when I didn't have anything to add to town or do.
