I'd have to say Melee and Brawl have the best original/remixed music. Smash 4 and 64 don't really interest me music-wise.

Me too. All of the songs that play on Onett are fantastic, but nothing can top Snowman in my book.

But if we're talking about stage themes then it's between Onett, Fountain of Dreams, and Obstacle Course (Winter)
