In general I don’t bend over too much, I’ll buy things to help them and do trades, however if it’s a request for a bug I cheer them on because that response feels more native to my personality. ^^;
I’ll do anything for Sprocket, Raymond or Chadder though. Except the bug request since again, I like cheering them on more aha.
i find i'm a lot more biased with lobo, my one villager who's probably never going to leave, so i definitely understand the feeling of being more prone to interacting or doing things for certain NPCs. i always try to catch them their bug or fish requests, especially because i just love their comments about them later on in dialogue when you're in their home.
It really depends on my mood and what item they want. In the case listed by the OP, that would’ve been a heavy nope. If it’s something random I got from a balloon or another villager that I don’t really need, I might be more willing to hand it over.

When I first started playing, I never said "no" to my villagers. I ended up paying for this when I realized that they could display whatever critter, furniture, or clothing that they received from you.
that's generally how it began for me, as well. i didn't play with any access to online forums or knowledge, really, and just went into the fray of things. so tank's got a sleeping bag (being one of my first villagers) and a bed that i made him, thinking he'd replace the sleeping bag with the bed. i try to stick to the theme of their personality and home interiors when i'm gifting them things, now. unless, like i've said before, i'm planning on possibly gifting them eventually. i know how annoying it would be to have a bunch of random stuff cluttering one of your favourite villager homes :c
man i just let them do whatever, except for catchphrases. everyone always wants a new catchphrase and i dont want them to get one and spread it so i just dont accept, however i may just start accepting their requests soon.
so far, letting my villagers take and get whatever they want has led to 1 very interesting scenario. Penelope and Octavian both have had fleas on my island, with Penelope being the very first and Octavian being the second. well, Penelope had gotten fleas again and i caught them, then i went to Octavian's house to give him his daily coconut. after i do that, i had a normal conversation with him, and he wanted to buy Penelope's flea. i nearly died on the spot but i had to give it to this dude. anyway i just want to give a PSA that i think setting out trash & rotten turnips on ur island causes ur villagers to get fleas more often. i dont rly have any numerical based evidence, but when i was trying to catch ants and flies for the museum and their models, a villager had a flea like every other day, but since picking up and selling those items, none of them have had fleas and it's been about a week or so. yea.
anyway i imagine when i actually get some dreamies i'll probably be more precise about what i allow them to have, or i'll just gift them clothes until they get out of an ill-fitting outfit that so-and-so gifted them.
this exact thing happened to me, with the flea. octavian seems to be extremely interested in buying fleas that were previously on other villagers for some reason
it's extremely interesting to see the range of how people deal with their villagers. i hope i can learn to be a little bit more like some of you, and start saying no to them. especially for the really expensive requests, my gosh.
