Do bamboo plants not produce shoots anymore?

I remember these things would get out of control in NL, but now I planted some bamboo weeks ago and think I had 0 shoots.
Not sure if it's because I placed them too close to one another or what...
I also can't harvest any young bamboo so I can't craft certain recipes.
Is young bamboo only available when the bamboo is freshly grown?

They produce one shoot if you planted them from shoots, if you took a full bamboo tree from a mystery island and planted it fully grown, then it will not produce bamboo shoots

Just the one huh? That would explain why I've not seen anymore since I 1st planted them... I got one from each tree then nadda..

Regarding bamboo shoots, you can get more on Mondays as a gift from Daisy Mae if you purchase from her. She's been sending them to me regularly as a thank you for purchasing turnips!

Yep, presumably it's in response to complaints that New Leaf bamboo gardens would overtake your town in short order if you didn't constantly dig up the shoots or block their spawns.

Young spring bamboo is a seasonal material. It should still be obtainable in the Northern Hemisphere but it won't be around for Southern until spring rolls around for them.

I've only bought turnips from her once - 100 of them - and got shoots in the mail afterward. So I wonder if it's bound to a certain number or if it happens randomly..

Unfortunately, I wouldn't be aware of what that threshold might be. As the above posters mentioned, it could very well be random with me just being fortunate to get them multiple weeks in a row. The IGN guide and the Fandom Wiki says that she 'may' mail them to you when you buy 'plenty' of turnips, which is pretty unspecific.

In case it is based on a number, I buy 3900 turnips a week.

I buy two full inventory of turnips weekly and I've recently bought...80 mil worth of turnips (i wanna say it was some 30+ trips of fill turnip bags) lol when I was going to my other town to sell. I've only had a letter from daisy once with shoots and I didn't get anything after the recent ones.

That said, what PP said is correct...if you plant a shoot and it grows, it will give you one shoot and then no more. If you replant already grown bamboo it will not give you one.

This is actually kind of a bummer, if you're trying to harvest shoots for DIYs. Because you have to choose between regrowing a plant (that will also produce a single shoot), and using the shoot in a recipe. Two or three shoots per plant would make more sense, so you could actually propagate and harvest for DIY.
