Hum, there are many I really like, but here's the ones that came to my mind.

Makes me all teary eyed listening to it actually. It just is a really happy song that brings back some nice memories. Of course the song is good too.

Whether you like the show or not, you have to admit Tokyo Ghoul has one of the most amazing openings ever. ^^

Yeah forgot that one too. I really like LiSA (the singer of Crossing Field, the first opening)
She also made openings for Fate series.
YES! I was getting worried; 5 pages in and hadn't seen anyone say "Butterfly", yet! Wada Kouji makes awesome music for the Digimon series! Probably my favorite anime opening song.
As for the discussion on Naruto ops/eds... "GO" is my favorite opening, and "ALIVE" is my favorite ending. Granted, I stopped watching not too far into Shippuden, so I only heard about two ops/eds from that.
It's hard to pick a top favorite, but among my top favorites are:

And so I don't spam the page with links, I'm also gonna give a shout-out to the "Oh! My Goddess" opening song; the first Ranma 1/2 opening, "Jajauma ni Sasenaide"; the first Kyou Kara Maoh opening, "Hateshinaku Tooi Sora ni"; and the second Kaiketsu Zorori opening, "Ajapaa".
