What's going on with seasonal DIYs?

I've gotten about 3 mush recipes but I can't seem to find any more of the bountiful series and am missing a lot of those. I sure hope I manage to get more of them.
I only shoot down a limited amount of balloons daily and I still have had good luck getting DIYs. Maybe your chances are better if you don't try to get all of them in a single day? Because I think I usually get one in the first few balloons I pop...

Both Islands have had good luck with the mushroom DIY recipes. Main Island Player 1/2 and 2nd Island Player 1 have completed their recipes. Found that I got most just doing my daily routine or working on decorating the island. A few times Players have got 3 mushroom DIY in a row.

I've had a similar struggle for the autumn DIYs. I have 2 islands, one Northern and one Southern, the Southern one was set to 'autumn' so May/June when we were actually in September, and I managed to get a couple of the pine/acorn DIYs, and my main island is set to current time, and I only got 3/4 mush DIYs and no pine/acorn DIYs, so I've bought them all off here to be safe so I have them (bit of a completionist, about 100 DIYs of having all of them 
)
However, I remember back in spring I ground so hard to get the cherry blossom DIYs and the balloons were pretty regular, (even with the awful Easter balloons), and I was about 5 off them all, and got the last 5, plus a couple dupes in a few evenings. However, I did the same trick this time, from about 6/7pm my wind direction changes so balloons come in from the west, which is easier for me cause I can leg it down the whole length of beach in one go, and then wait every 5 mins for a balloon, but this time, there were times when there should have been a balloon, and there wasn't, so for example, I'd get the :05 balloon, but then the :10 balloon wouldn't show, but the :15 would. I wasn't going inside or anything, just running up and down the same stretch of beach, looking up as I went, then after getting maybe 3/4 balloons, they seemed to stop spawning all together until I went inside somewhere and came out.

i managed to get all the mush recipes, but only 3 of the bounty recipes (still missing the arch and the big tree). since the beginning of November ive been working on my island so ive managed to shoot down a lot of balloons.

I've moved my Lucky Gold Cat to the southeast corner of the main room now. Appreciate the tip, @tajikey! Keeping my fingers and toes crossed that this will help me get the last four Acorn and Pine Cone recipes before maple leaves start falling. 
I heard the big tree and the arch diys will be available later in the season.

They'll be available starting Monday, which is when the maple leaves start falling from the sky.
I'm not trying to rub salt in the wounds of people here, but I will point out something I noticed.
Feng Shui is important in your homes for this very purpose. I decided I was going to get all the Mush DIYs in one single night just to have it done with, so I farmed balloons and literally almost every balloon dropped me a different mush recipe, so I thought 'easy enough' and decided to get the last 3 I needed the following night.
The following day; however, I changed all my rooms to what I consider novelty rooms ie. I swapped a complete Antique furnished room with perfect Feng Shui for a Crop Circles floor with a flying saucer, etc etc. When I went to balloon farm that night, I was getting NOTHING in terms of DIYs. I think only 1 out of maybe the 20-30 balloons I popped had a Mush Wreath in it (which I already had, so disheartening to know you can get dupes before you even get a complete set.)
This evening I reverted one of my rooms to a perfect Feng Shui room, and the first balloon I popped had the Forest Wall DIY, which was one I did still need. I'll post here again if I managed to complete the set tonight.

It's so weird and it might be a tiny bit off topic, but I can't find any of the autumn diy's! granted I haven't looked very hard, but I have looked! I shoot down balloons and look in bottles, but they elude me every time. I think they are super cute, they just hate me for some reason.
I thought it was just my bad luck!
I only have 3 of them, also. Been getting more crafting materials (especially clay...ugh) than usual lately. And dupe furniture. I usually have an easier time with seasonal DIYs, so it’s been a little frustrating. I’m gonna try to move my lucky gold cat to the southeast & see if that helps.
I would like to know what a perfect Feng Shui room needs. Could you please give more details?
My current main room has yellow along west, red along east and green along entrance. I found that layout through some online post, but don’t know if that is the same as yours.
I've had the same thing happen to me. I rarely get balloons to spawn (I know they should spawn at XX:X4 and XX:X9, but many times they don't). Add on to that that most of the times they do spawn, it's an ugly skirt I have no use for. I've had some luck over the past three days and got one DIY on each day, but I remember I got most cherry-blossom DIYs in the 10 days they gave us, but I'm at 5-6 DIYs or so after more than two months of fall DIYs being available, so I'm not sure I'll be able to get them all.
The balloon DIY system does suck, but there's a way of farming balloons which requires going into Nooks cranny at a certain time, pretend you're going to buy something (have a dialogue w/T&T), leave at a certain time and head to the beach and a balloon will appear at a certain time afterwards.
