Weird question about nook miles achievements?

So before this update and introduction of things like gyroids and gyroid-themed achievements, were there just random blank nook miles achievements showing that no-one could be certain how we’d earn them in future? Or with the update did new gaps start showing on the nook miles page for the new possible achievements?

No. The achievements cards, or "gaps", don't appear for an achievement until they're actually implemented in the game. So before this update there would've only been 87 slots showing for the achievements list, but the latest update brought it up to 96.

That is correct. The update added a bunch of "gaps" that needed to be filled, with no indication what they were before you completed the first stamp in them, just like the ones before the update. There were never any gaps that could not be filled due to content not yet being released.
