I believe it is one rock per day, except it'll respawn in a spot that's different from the spot you broke your previous rock. So make sure you're not checking in the area you broke it; it's likely somewhere else!

Unfortunately that doesn't seem to be correct. As I said before, I only get 1 rock per day, and it is the money rock. I don't think I've seen an iron rock in the last 2-3 days. I don't time travel, so I spend a lot of time traversing my island everyday.
Ive only ever destroyed 2 rocks. The first one I accidentally destroyed while I was apple-powered and the next day it respawned on the very same spot. Second time it got destroyed because I decided to place a villager home there, it’s been I think two days? (not sure, losing track of time here) and I haven’t seen any new rocks pop up in my town.

Hmm. I'm not sure then. I just remember someone else mentioning that it was one rock respawn per day. Hopefully they actually DO respawn and people who accidentally broke all the rocks in their towns aren't out of luck getting rock resources without having to go to other islands...

Maybe the key is to not break the rocks, unless you plan on waiting for them to respawn. If I ever see them again, I'll deplete them, but leave them as is.
