So I've finished my daily shopping and talking with villagers today and I'm really losing my patience waiting for trees to grow and public works to be built. So say if I TT one day forward, and finish my dailies, then TT forward another day, does that count as TTing one day or two? Also, I have the perfect town rating with the beautiful ordinance, will TTing affect it the rating? If I continue doing that and TT 7 in game days, will that count as TTing one whole week or just one day?

Only if you do something to affect your rating, like leaving items/trash out, etc.

It counts as a whole week. TTing forward counts every single day that passes, but TTing back counts as only 1 day, no matter how far back you go.

Okay I'm really sorry, even the way I worded the question is starting to confuse me, let me try this again.
If I'm playing on Monday and TT to Tuesday in game, play around a bit then TT to Wednesday, will the game pick that up as a big jump from Monday to Wednesday (if so what happens to the stuff I do on Tuesday...?), or just one day from Monday to Tuesday, and then another day for Tuesday to Wednesday?

Its two days either way. Because even if you don't show up Tuesday, you and your town still exist.
Yes, it's still 2 days. Whether you jump forward one day at a time or multiple days at once, the game will still count every day that passes going forward. Every time you pass 6AM it counts as another day.
The things you do on Tuesday will still save. That's completely unrelated to the action of time passing.
