For fish:
I think red snappers are quite hard to catch. If you played acww, then you'll know that it's fairly common there, but in acnl... caught like one red snapper out of 15 other fish. Especially annoying on the harvest fest when you need one.
In my latest town tho, the rare fish like the coelacanth are quite easy to catch! One time, in the rainy season I believe, I played in the evening to try to catch a coelacanth for the museum. I went down to the beach and what do I see? The first fish down there was a really big one. So I thought, maybe it's a coalecanth. I catched it and it really was one! But the real shock was, right 2 steps next to it, there was another one and I managed to catch it! Lol. I caught two in less than a minute! But of course that was just one time...
It's also quite annoying to find rare fish on the island tours when you can't take them back. I remember catching a saddled bichir on a tour where you have to rerelease the fish. Quite frustrating >_<
The most annoying things to catch are the diving creatures to me tho. Especially the fast ones. They always go behind the ropes before I can catch them! Argh!
For insects:
Scorpions and tarantula can be quite scary, appearing out of nowhere, but I like catching them. They add like a little... adventure? to the game. But the tarantulas don't seem to like me in my current town, lol. I saw like three last summer, but they all dived into the river before I could catch them. xD
I'd like to think that the luck to catch such rare fish/etc quite easy depends on your town somehow... I had a town before where I never got to catch certain fish. But I got quite a lot of four leaf clovers. In my current town, I can catch more rare fish, but I have yet to see at least one four leaf clover. Weird.
like one time one of my villagers told me to go fetch them a freshwater goby, but i could never find one in the end. to make things even worse, i found about five or six stringfish while looking for one of the more common fish in the game ;_;
