Good lord, I have caught one but trying to get the three for CJ is killing me. I'm at over 300 fish bait in October alone, and I caught exactly one mahi-mahi (and that one was a random spawn while I was walking by, not even a bait drop!).
I had no problem with the stringfish, golden trout, or any of those other fish that have been many people's horrors, but the mahi-mahi is going to kill me.

I was actually lucky with the Mahi Mahi. I was playing with a cousin of mine and all I said was "I still need to catch the Mahi Mahi" while I walked past the pier and I noticed a big shadow. I went to catch it and it was the Mahi Mahi. It was like I almost commanded it.
It was one of the pier fish I caught without looking for it. I just saw a big shadow and was like "that's a big chungus"
And then it was the big forehead fish.

When I saw one irl at the Monterey Bay Aquarium; they are so weird looking and massive. The other name they go by is dolphinfish. Now their big dumb faces will live forever in my brain, lol.

All 5 players have caught the Mahi-Mahi. Found the best place to catch them is on a Mystery Island with no bait.
In August I started a new player and she caught 2 on a Mystery Island. At the time she was looking for summer bugs and saw a big fish by the pier. It was the Mahi Mahi.

Yeah I was planning on having a model of all the Pier Fish just to display near my Pier for fun.. I doubt I will get the Mahi-Mahi model this year lol.

so can you catch them off the pier where you land on a mystery island?

Yes. Make sure to check all of the pier. Caught some on the side and behind the plane.
Mystery Island is smaller so more fish respawn.
I think I was using bait to catch another type of pier fish when I found it. I had gone through maybe 200 bait at that point. And then recently I caught one on a NM island without even trying. I'm also keeping them in my storage so I can make models eventually, but I imagine it would take a really long time lol.
oof that one was a pain to catch. i wanted to catch it along with the giant trevally in one go using bait - in the time that it took to catch one giant trevally, i managed to catch 3 mahi-mahis. the process wasn’t super sexy but i got luckier with it than i thought i would aha ;u;

Just got a ton of fish bait and used them, and eventually I got lucky! You can do it!
I have. I just visited my pier every day, multiple times a day until I caught one. I didn't use bait or anything. I've heard they spawn more easily in Mistery Islands but this is the one fish I never found on those so maybe it depends on your game?
If it's any consolation, I have a lot of trouble with some bugs, especially the beetles that spawn on trees.

I caught about four of them over the span of 2 months. the first time I caught one I didn't use bait, so it's possible, just very tedious.
I was constantly searching for it everyday, even crafted fish bait to try and catch it with no luck. It was only when I stopped actively searching for it that I finally caught it (with no fish bait) a few days ago! I doubt I’ll have the same luck catching 3 more for the fish model though!
I saw a fish by the pier, didn't think anything of it, and went for it just to get a quota for CJ's sea sports challenge, and it turned out to be a Mahi Mahi! I didn't even know they spawned on their own like that; I thought I would need bait to get it.
Now see, every time I am trying for Mahi Mahi I find the giant trevally. Like yesterday, I caught 2 out of I think 60 bait.

After a gross amount of bait I finally caught one today. The only fish that gave me more problems was the stringfish.
