If you mean the ores you can get from stones, you can use them to remake some furniture. For instance, you can use Sapphires on Blue furniture and Rubies on Lovely furniture.

Also, if you combine 3 Golden Nuggets and 10k, you'll get a random piece of Gold furniture.

gold ones you can give to cyrus to make golden furniture series (3 gold ore plus 10K bells)
the other ones you can use on certain furniture but if you don't plan to redo furniture then you can sell them to Reese or put them for flea market...villagers seem to love them and pay good money for them!
