I caught 3 last night and I don't know what they're for or what I can do with them.

If you build a snowmam, she will take them to give you ice furniture. If you build her perfectly, she will require 3 flakes per piece. If she's imperfect, 5 flakes per piece.
Or you can sell them at Re-Tail for 500 bells per flake.
