I think your list looks great. I'm especially glad to see you considering both Knox and Sterling. They're both great villagers and will work so well in your Medieval themed town.
Once again I have been screwed over by Isabelle not letting me do my job and run the town. Mine is perfectly aligned with a pond that was right next to cliff making it really awkward to actually get to.

I don't do bugs, fish, petitions and house visits unless it's for right then. But the petitions are mainly because I don't have very reliable internet connection with my 3DS.
FYI, you don't have to shake the trees to catch bagworms/spiders. if you just hit the tree with the net it'll catch it...
I find this amusing because I go to Australian only islands almost every night after 12am. Now and then I do run into people. I try to avoid International islands simply because of all the awkward moments.
