I always imagined there was some unseen area of Nook's Cranny which serves as a grocery store. It would also explain where all the fruit and fish go after you sell them. The ice cream truck? I don't know, it's probably like that bus from the Spongebob episode "Rock Bottom" so it drives into the ocean as soon as the player is about to see it.

Mine go off-island. 2 months ago Sylvia/Vladimir were talking about their off-island trip. Sylvia said The other day we were off-island some kid hears us talking, explodes into tears and runs off. While she was saying this I was screaming why didn't you take me? Where is my ice cream and snacks?
Now I'm remembering how when you invite Lazy villagers to your campsite via Amiibo, they talk about all the different kind of chips they packed. How about cracking open a bag with your best bud, me, the island representative. And speaking of, if we're such big shots, you'd think Tom Nook would throw us a bon appetit and add some snack incentives!
