Aaaa there are so many! I'd have to say Steep Hill or K.K. Jongara. Steep Hill is very chill and calm, has a sad undertone, but it's very nice. K.K. Jongara has really awesome traditional Japanese music vibes and the little shouts are really cute (hut!). Both are really great ;; The super smash bros version of Go K.K. Rider is bae tho lmao
