Collecting gyroids, but I'm too lazy to sort and organize them. I'll probably enlist help some day to get that going.

i also have a more casual cafe, a convenience store (lots of 7-11 items) and a room that's kinda like a flea market (tons of tables with random stuff i don't want to throw out like the superb coffee beans).

In Volantis I have a winter wonderland.
One room is all the furniture from the Ice Set - "Iceland"
The second room is all the Jingle furniture, and related Christmas items - "Jingle Bells"
The third room is all the snowman furniture - "Snowman's Lair"
And the final room is the winter furniture from the Bingo cards - "Snow Sports"
In Valyria, I have various furniture from different seasons.

The second room has all the Egg furniture - "Eggcellent Eggs"
The third room has all the spooky furniture - "Spooktacular"

Aww, I love your cafe! Super cute. I want to do something more like this, but I'm such an item hoarder - I can't bear to get rid of the furniture I get from events, and it's so easy to stick it in the Museum.

Mine is storage. 
I have a room for my mannequins, select accessories, shoes, clothes, and wetsuits. There is a room to store my Island and Egg sets. There is a room to store my Snowman, Snowtyke, and Snowboy items. And then my last room has my collection of region based unorderables (Red Ogre Mask, twelve grape plate, etc...) and my birthday set.

The first room has mini fossil models, the second one has fortune cookie items, and three and four are currently being used for extra storage. I plan to use one of those rooms for villager pictures in the future, not sure about the last one yet.

I really love this. I haven't seen that floor and wallpaper used in a caf? before, but I think it works really well.
I use all of them as storage rooms. One is filled with ores, one with bushes, one with villager pictures and the Sweets set from Gracie, and one with unorderable DLC and other unorderable stuff.. Once I have space for everything in my closet, or once I know how to get rid of stuff I never use, I'd like to make some of those rooms into original creations.

1 - various DLC and snow people items (other than Ice series)
2 - was fortune cookie items, but I'm moving that to a secondary character's basement, so it's kind of a mess right now
3 - was balloon furniture, now mostly streetpass items
4 - Gulliver items
