Well bamboo can't spread to tiles that already have something on them. You can contain it with patterns, flowers, trees, bushes, or other buried items - anything at all, really.
Animal Crossing's developers really wanted Bamboo in the game to simulate how fast bamboo grows in the wild, eh xP?
Anyways, the only ways I can think of is by planting flowers or putting patterns around the bamboo you wanted to keep so that the bamboo doesn't sprout out around there.
Bushes can also be planted around bamboo too. Keep in mind though that bamboo sprouts can show up two spaces away from the main plant so it'd take a lot of flowers or tiles to block it all in if you want a forest.
Plant it in the area you want and then put things around it so that if they do sprout, it won't grow out of control and the sprouts will die if you don't dig them up. I've found that works best.
