Just a pretty amusing story I thought i'd share!
So over the past summer, i've come across a few, but still not a whole lot of tarantulas or scorpions to go towards my encyclopedia/museum (2 tarantulas that jumped in a river, 1 that unfortunately bit me when I didn't see it and 1 scorpion that despawned before I could get my net out!) They all spawned in 2 places, so I was pretty convinced that those were some spawn points that they would be more likely to appear in, which did turn out to be true!
Earlier in the night, I managed to finally get the scorpion! Was pretty happy with that since it was the first one i've gotten a chance to catch. I was just playing as normal, until I got to 23:00 and hadn't come across anymore of these dreaded beasts! I decided to do something I don't tend to do, and actively try and get a tarantula to spawn since once the clock hit midnight, it would be September and I would be waiting another year for them to spawn!
Those 2 spawn points were quite close to each other, so I just kept going in and out of a nearby building, walking to each of those spawns and back. For almost 45 mins, I hadn't really found any (although I did get quite a few Giant/Rainbow Stags and other bugs
). When I finally heard the scuttling in one of those spawn points, it was a scorpion, of which I had already caught! I just watched it disappear in disappointment, and went back to try for the last 15 mins of the month. The unfortunate thing, is that this happened another 3 times! By the end of the night, I had seen an extra 3 scorpions but no tarantula! 
 Probably what I get for actively pursuing them, the game gives me what I don't want! 
Don't know if this will be useful to anyone looking for these 2, but all 5 Scorpions i've seen spawned in the same place (apart from 1, which spawned in a place that tarantulas often spawn so I guess the 2 might share spawn places?) so if you have any place in your town that you often see them, then having a look around there might be useful. Think the best thing to do is just get on with whatever you're doing and just play the game as normal, and you may just get more fortunate and come across them!
If anyone else is still missing the tarantula like me, there's always next year!
