first film/book that comes to mind for me is howl's moving castle! although i loved the book i actually have a softer spot for the film (especially as i read the book after, the film just captured the magic and world so well!)
Personally I'd have to say Perks of Being a Wallflower! I already loved the book as is, but man does Logan Lerman do an amazing job at playing his role.
A close second is probably The Fault In Our Stars.
This is tough, but a childhood favorite would be Matilda. I was obsessed with that movie as a child, and I loved the book by Roald Dahl as well. And speaking of Roald Dahl, Charlie and the Chocolate factory/Willy Wonka & the Chocolate Factory is another book/movie I enjoyed immensely. I saw Howl's Moving Castle mentioned above, and that was also a book/movie I loved. I'm not really a big movie person, but I'm sure there are other movies I enjoyed based on books. It's just hard to remember them off the top of my head
The Right Stuff-Based on the book of the same name written by Tom Wolfe.It's about the original Mercury astronauts who were the first Americans launched into space.This is one of the few times I felt that the film was just as good or better than the book it was based on.
The Natural-I'm not a baseball fan but I still love this movie.It's based on the novel by Bernard Malamud about the trials of an older baseball player taking one last swing at the game he loves.The ending of the movie differs drastically from the novel but I'm glad they did it.The novel's ending is quite sad.
Goodfellas-Hey,fuhgeddaboudit.Goodfellas was based on a non-fiction book called Wiseguy written by Nicholas Pileggi which chronicled the life of a Mafia associate named Henry Hill.Another movie that's just as good or better than the book.

If an adaptation is different from the original, fine, but don't make it stupid.

I agree the green mille was excellent. Another Stephen King adaptation i liked was the shawshank redemption.
Stephen King adaptations i didn't like- the shining (mostly because Halloran got killed off) and the mist, which had a very stupid, hopeless kind of ending. Ugh.
I loved The Color Purple. Probably one of my favorite movie adaptations.
Movies that were different from the books but i still really liked them - How to train your dragon, and the lord of the rings trilogy.
Shrek, Jaws, The Birds (based on a short story), Charlie and the Chocolate Factory, Forrest Gump, Schindler's List (sad though), The Wizard of Oz, The Princess Bride, Little Women (the newest one) and The Devil Wears Prada.
The Harry Potter movies are nostalgic, but they weren't all the best adaptations. Goblet of Fire was always my favorite book and movie, though, for some reason.
