What did you cook or bake today?

French Toast! Not too exciting but it was tasty.

I made myself a vegan cheeseburger with jalapenos and an onion ring. Tomorrow I'm making vegan carbonara.
 
Chicken Alfredo with Mushroom, Broccoli, and Red Bell Pepper. Chopped up bacon to garnish the top.
 
I haven’t done it yet today, but I’m planning to bake a cheesecake for my mom for Mother’s Day tomorrow! Probably just a plain one to serve with fruit on top.
 
We didn't take a picture but my girlfriend and I had Vegan Pizza with black olives and pineapple on it. Never thought plant based cheese could be so delicious!!!
 
Which one did you use? I like Violife!
We used Daiya! Shredded Mozzarella and a bit of shredded Cheddar too! The cheese is supposed to be dairy, soy, and gluten free!

Did you use the new ones made from chickpeas? I like the old Cutting Board style but I haven’t tried the new ones yet.

General idea is chickpea and potato protein and a bunch of natural oils and starches. It is somewhat oily and more gooey than dairy made cheese but I kinda love it! We've used it in quesadillas and pizza now. I haven't tried it cold yet, we've eaten it hot as a topping each time.
 
I mean I have not made anything today but 2 days ago I made chocolate chip muffins which were pretty damned good if I say so myself.

Yeah the Daiya shreds are pretty gooey and oily. All vegan cheese is oily, because it’s mostly oils. You should try Violife. Miyoko’s just came out with shreds too. They’re pretty good.
