I love pretty much all the birds. Most of the designs are great and a lot of them are average. All the eagles and ostriches have great designs!
Villager species you like that are over/under rated?

Dogs are my favourite. I like the wolves and alligators too (love Alfonso in the AC movie!! And Boots was in my NL town as soon as he came back in the amiibo update and I loved him)
Dogs super underrated, I have Goldie, she's staying forever
The lions! It doesn't help that there are so few of them. Honestly any species with a 3D face is nice (esp deer!)
I love the cat and wolf villagers I've had but their designs could definitely use some work. The cats' ears are too pointy and could stand to be a little rounded at the end, and the wolves' snouts are a bit too long.

YES! THIS DRIVES ME INSANE! I had Pietro on my island at one point and was planning on keeping him until I realized his clown nose wasn't 3D! this made so so mad, and ultimately contributed to him being kicked off my island.
I like most of the wolves fine, but I think they're so overrated tbh. I don't get why everyone is crazy about them.
Also think the octopi are overrated. Octavian is the only decent one IMO.
Underrated are the ostriches! There aren't really any ostriches I hate, and some of the designs are super creative!

I like a lot of the ostriches and tigers, and I don't really see a lot of people who agree with that sentiment outside of Phoebe and Blanche for the ostriches.
When it comes to underrated species, then I would say the hippos are my favorites here. Most people say they are ugly and not that cute from the design and all, I think they are pretty cool and deserve more love. Same goes to the gorillas, who aren't that bad.
Cats and wolves are a bit overrated, but I still like them a lot.

I really like half of the wolves but the other's I can do without. The eye thing doesn't bother me and it surprising works for me. Some they put more care into than others, for example I think Whitney looks amazing and they seem to have used some very nice painting on her model. Kyle I feel the exact opposite about.
However, I think the horses as a group are underrated. The gradient coloring on the hair and their tail lifting up their dresses are some amazing subtle touches that I appreciate in NH.

Most of the monkey villagers are honestly really cute? I feel they get overlooked a lot because monkeys as animals aren't seen as cute so people don't give them a chance in game.
Kangaroos, Anteaters and Mice also definitely spring to mind but they were already mentioned so I don't want to repeat.
edit: forgot to mention overrated. I think people can enjoy what they want but cats are definitely a crowd pleaser. Not surprising since cats are a beloved and common pet species and the cats have a lot of solid designs.

I definitely agree with cats being a little overrated - their ears are so tall and pointy! And I get that's probably a nostalgic design choice from the early days of AC that they decided to stick with but it's just so weird with the rest of their bodies being rounded and normal-looking. They're also very skinny 
Oh, and cubs, I think they're way overrated as well. There's just nothing I find interesting or attractive about their model design. I often wonder why both bears and cubs exist in AC. Granted you have a ton of great cub villagers like Bluebear, Pekoe, Maple, Stitches, Chester, Vladimir, Murphy and now Judy, so definitely a colorful lineup... but it's like they had to make these cubs so vibrant to compensate because the species design itself is so basic LOL. I prefer squirrels or bears to fill whatever void cubs do tbh.
I think koalas are underrated. Melba's gained traction this go around, sure, but what about cuties like Lyman or Eugene? Yuka isn't even that bad, pretty average actually for a snooty! Ozzie and Alice... have their fans, Gonzo is one of the cuter cranky villagers for sure. They're just so round and fluffy looking haha
Also PIGS! I think the pigs are adorable! Hugh is basically pig Jeremiah, cute. Gala is, for lack of a better descriptor, gorgeous. Rasher is literally my uncle I love him

I totally agree on the wolf thing! idk what it is but I dont find their designs appealing? (except skye <3 ) I also LOVE dogs! esp in NH their ears are so floppy

I would argue that the koalas and the kangaroos are both pretty underrated. Hardly ever see much demand for them, but they do have their standouts here and there. I find it pretty cool how the female kangaroos have a little joey with them all the time, which is really cute.
In terms of overrated-ness, I agree to an extent that cats do have a lot of really popular names. But then again, I do think that a lot of the cat designs are pretty well done, and it doesn't help that there's quite a bit of them.

not really a fan of the terms over- and underrated since it can feel like complaining about the opinions of others, but i’m not personally a fan of the wolves, either! the only ones who appeal to me are audie, and maybe chief with his acnh redesign? more because of their colours than anything else, though; they still wouldn’t come close to being considered a candidate for my island.
i also really like koalas! eugene, sydney, melba, alice, and canberra are all very appealing to me 0:
