I'm looking at resetting my town, but I don't know what I should do with my new one. What theme should I use (e.g. Pink, space, video game, zen)?

I don't think someone can really tell you what theme to do, since it's your town, and nobody wants to suggest a theme that you won't like the look of.
You should make a theme based off of what you like. You could do pastel or a specific colour theme (purple, pink, blue, etc), or you could theme your town off of your favourite movie/tv show/etc or maybe even a seasonal themed town (spring, fall, summer, winter), or just whatever else interests you.

I just went by the previously set ones like the zen, fairytale and modern themes since there's public projects to build for them xD
But yeahh definitely try something new and incorporate those different buildings to make it suit your theme, can use the colours of flowers to give you an idea of the colour scheme you want xD

Town theme idea book to the rescue! 
All of my towns are themed: One after my favorite movie, one after my favorite TV series, one after a combination of a favorite author's books, and I'm working on one themed after a favorite video game series.

Maybe a very cute/green urban theme? You could also try making a town with different themed sectors.
I'd personally make something based off of your hobbies, interests, or favourite things!
Lunavila is inspired by space and the moon because I want to learn about astronomy, and Drowsy is themed after witchcraft because I'm studying to be a witch, so both of those are inspired by my interests.
