i have cascading waterfalls at the front of my Island and i’m always looking for ways to make it more elegant. any tall 1x1 item suggestions that i could put there?

The tall lantern, tall garden rock, fan palm, cypress plant, champion's pennant, and streetlamp immediately come to mind. Some of the statues would be suitable as well, fake or real (beautiful, gallant, valiant, robust).

I decorate all of my cliffs with 1 space waterfalls and then add mush lamps of varying colors.
Jail bars are quite tall. In fact, I think they're TALLER than a 1 level cliff. I was gonna use some for my island but they ended up looking ridiculous because they were too tall 
But, for your purposes, I think a "tall lantern" would look great!

those statues are 1.5x1, i believe, which makes me sad because that’d be so pretty

My bad, they look like 1x1 from Nook Exchange.
That's such a shame because they're so beautiful. Why do the devs have to tease us like this? XDSeriously... has anyone ever been like "SWEET! It's 1.5!" Because, for me, having that size in the game doesn't seem to accomplish anything besides guaranteeing some items will be off-center
You could use items like the upright locker and face it backwards (with the front away from the camera) and then perch stuff on top using it as a sort of pedestal. Coloured nova lights might look cool, for example, but it opens up the possibility of using literally any item you can place on a table!
It will get kinda tall though. And I haven't tried this idea outside yet...
