Because they will remember you and talk about you to the owners of the town. Some villagers will also make rumours about you or suggest to buy a present when you're birthday is near.

Some owners find it very off-putting and that's why they request not talking. In time the villagers will forget the visitor though unless being frequently talked to.
I used to love in City Folk when my villagers would remember talking to a person that hadn't visited my town in years. I think it makes for a nice reminder of who you've connected with.
Another reason why people don't want visitors to talk to villagers is that if one of them is packed up, they may be saving that particular villager for a trade or an adoption. They wouldn't want you to talk to them and end up taking them.
I think for a lot of people it's just an ease of mind thing. It's a lot easier to just not let people talk to villagers than trusting people to follow/understand rules like "Don't talk to villagers in boxes."
Maybe people who do a lot of trades don't want their villagers remembering transcient visitors, so they aren't reminded of a bunch of randoms they can't even really remember themselves. I personally find it hilarious when they bring up a visitor, so terribly gossipy.
Hmm. Good question. I've seen a few explanations for it, one good one seemed to be that it could up the chance of TTing accidents because they may move to the other person's town if they know them previously. I'm completely fine with people talking to my villagers, though.
I always just assumed it's because it's annoying when your villagers talk about other people; I've had moments where my villagers told me about people who I don't even remember connecting with. XD I have, like, 70-something people on my friend's list, though, so I tend to forget who's who. That being said, I don't care if you talk to my villagers; I truly don't think villagers move to another town randomly. The only villagers I've ever gotten from Wi-Fi were all ones who have been voided by their previous mayors.
I don't understand that either, when people visit my town they are free to talk to whoever they want as long as that villager isn't in boxes. Maybe I trust on peoples common sense too much but when I visit another town I won't run outside the paths, pick flowers or fruit or chop down trees. If someone says it's ok to pick flowers/fruit it's a different story. Sometimes I visit people who don't have rules at all and I never thought about NOT talking to their villagers, isn't that part of the game?
i always assumed it was because the villager keeps mentioning the person over and over.. but when you visit someone's dream town and talk to the villagers don't they talk about that visitor too? a few of mine keep mentioning my friend who visited my dream town the other day.
Some of my friends want me to talk to their villagers, so they can tell me that their villagers hate me... (because the snooty villagers aren't really keen on visitors). Otherwise most people tell me not to talk to their villagers.
