I've also got some that are still in eggs. These are all freshly hatched from eggs, so, of course, their stats aren't going to be very high at all.

IVs can be checked by taking your Pokemon to a man in a pkmn center in the Battle Resort PKMN center.

Okay, I don't know why you would say this is true because I looked it up and I went there and tried it for myself. That guy never tells you exactly what the IVs are and all IVs stated anywhere else on the internet apparently have to be approximations, especially if the pokemon aren't level 100. Also, all the stats have different ivs. However, I did use a iv possibilities calculator for all of my pokemon that I have available for trade and had their potential iv stats put up top. I also talked to that guy at the pokemon resort and put down what he said about the first six pokemon I have available to trade. So, really I am trying to give you the most accurate answers I can about the pokemon, but this is the best I can do on iv stats.

What the judge does, is give you an idea of the range of IVs.
When people ask for IVs, they're mostly looking to see which IVs are perfect or close to perfect. An example of a perfect IV spread is 31.31.31.31.31.31 (max in every stat)

I copied and pasted this bit from bulbapedia. It should help:
"Incidentally, I would say its greatest potential lies in its <best stat>"
(If the Pok?mon has two or more equally good best stats, then he will add one of the following lines:)
"But its Attack stat is good, too."
"Hmm. And its Defense stat is good, too."
"Although its Sp. Atk stat is equally good."
"Its Sp. Def stat seems just as good, though."
"And, well, its Speed stat is good, too."
To describe the value of the Pok?mon's highest IV(s), he will use one of the following lines:
IV range of 0-15: "It has rather decent stats, I'd say. That's how I judge it."
IV range of 16-25: "It's definitely got some good stats. That's how I judge it."
IV range 26-30: "This Pok?mon has some fantastic stats. That's how I judge it."
IV of 31: "Stats like those... They simply can't be beat! That's how I judge it."
Lowest individual stat
If a Pok?mon has any IV of 0, he will use one of the following lines:
"But its HP... It's pretty dismal, you know?"
"But that Attack stat... It's terrible..."
"But how can you make it through battle with this kind of Defense stat?"
"But this Sp. Atk won't even leave a scratch on an opponent..."
"But this low of a Sp. Def stat is going to leave you high and dry..."
"But you won't get anywhere fast with this low of a Speed stat..."
(And if there are 2 or more IVs of 0, then he will also use one of the following lines:)
"And that's quite a disappointing Attack stat there, isn't it?"
"And that Defense stat is nothing to write home about, you know?"
"And I'm afraid that its Sp. Atk is pretty bad, too..."
"And it looks like it's no great shakes when it comes to Sp. Def either..."
"And that Speed stat... Well, it's nothing to brag about, that's for sure."

If the pokemon has "good IVs" in a stat, it likely has the judge saying
"This Pok?mon has some fantastic stats. That's how I judge it." (26-30)
"Stats like those... They simply can't be beat! That's how I judge it." (31 *PERFECT*)
after he lists those stats. If he doesn't include a stat, then it's likely that stat has low IVs.

But if the judge says anything other than that, I'd suggest you just say the pokemon doesn't have good IVs.
Idk if this helps, but I thought I'd try.

I did include what the judge guy says, but as I stated before it is still considered an approximation for the ivs even if you try to figure it out based on what the judge says.

What I'm trying to say is that people don't expect you to give the exact IV spread. If the IV for a stat is less than "fantastic" or "perfect" then you'd say that, that stat has low IVs.
Ex. A pokemon has great stats but low special defense
31/31/31/31/x/31
(hp/attack/defense/sp attack/sp def/ speed)
