I have a good amount of shinies, but not too many stories to go with them. I hatched most of them from eggs acquired from breeding using the Masuda Method, utilizing a Japanese Ditto.
That said, I suppose some standout moments would be:
- My first non-Lake of Rage Gyarados shiny was a shiny Gligar I found while just traveling down through Johto Route 45, just south of Blackthorn City, in HeartGold years and years ago. I don't know how I actually noticed it since I had looked away and hadn't seen the shiny sparkles at the start of the encounter, but something in my brain told me that it looked different and I decided to check online. Lo and behold, it was a shiny Gligar. I threw a Dusk Ball at it and caught it. I had never really been interested in the Battle Frontier, but I decided that I really wanted to evolve the Gligar because Gliscor's shiny colors are really cool. I grinded out enough battles to earn enough Battle Points to purchase a Razor Fang and evolved the Gligar into Gliscor as soon as possible. I originally named it Diego because, while I've never been a sports person or very into American football, Gliscor's shiny coloration made me think of the San Diego Chargers (now the Los Angeles Chargers) colors. Sometime soon thereafter, though, I decided that I wanted to get more into shiny hunting. I changed Gliscor's name to Harbinger, both because the name sounded cooler and was a reference to Mass Effect and Mass Effect 2 (before Mass Effect 3 fiasco) which were games I was into around that time, and because the word harbinger basically means a sign of things to come. This new name of Harbinger seemed more fitting, because from that point I was determined to acquire more shinies.
- One of my early Masuda Method shiny hunts was Porygon, because I like the Porygon line and I also really like the shiny coloration they get. I was breeding them to no avail, when it came up that someone wanted a Tepig. Any details past that have been lost to time, I can't remember the full context. Regardless, I actually had an Emboar I could breed and get a Tepig for them quickly. So, since my Porygon hunt wasn't working, I decided to just take Porygon out of the Day Care long enough to get a Tepig egg and swapped the Emboar into the Day Care. I was just expecting an ordinary Tepig, but it turned out that, wouldn't you know it, the first Tepig egg hatched to reveal a shiny. I was both happy and annoyed; a shiny is a shiny and I happen to like shiny Emboar's blue flames, but I was also disappointed and frustrated that this happened right exactly after I took the Porygon out of the Day Care. Regardless, I kept the shiny Tepig and got another egg that hatched a normal Tepig to trade to the other person.
- I was playing Pokémon Alpha Sapphire and breeding a team for use in Pokémon Omega Ruby. One of the team members was Sableye, who I wanted specifically to be shiny. I had gotten all of the egg moves I wanted on the parent and it had the Hidden Ability, and as usual, was paired with a Japanese Ditto. So, as it turns out, on literally the very first egg, I got my shiny Sableye. It had absolutely everything I wanted it to have; gender, egg moves, Hidden Ability, everything. Best luck with a shiny ever.
- Soft resetting has never really been my preferred method of shiny hunting. I had tried a few times in HeartGold for Mewtwo, Moltres, and Snorlax, and a starter on a subsequent playthrough, but none of those were successful and it kind of turned me off from wanting to bother with soft resetting. I greatly prefer Masuda Method hunting because you have much more control of basically all of the variables and get Pokémon with all or hopefully most of the things you want (moves, abilities, etc.), and ideally get something that will be all around better in battle than a wild encounter. That only applies for things that can breed though, which obviously excludes legendaries.
I really wanted to acquire a shiny Kyurem for a team I had in mind and, with no other choice, decided to hunt for it in Pokémon Alpha Sapphire. The addition of the Shiny Charm in Black 2 and White 2 and all subsequent games increased the likelihood of encountering a shiny, so since I had a Shiny Charm from completing the National Pokédex, I decided why not try. I don't remember how many encounters it took nowadays, but I'm happy to report that the hunt was successful. I've had other wild encounter shinies over the years, including a Legendary (Cobalion), but none of them were so purposefully sought out. I'm glad that Kyurem eventually decided to grace me with its sparkly presence.

Those are all the remarkable ones that come to mind. As stated earlier in the post, I have a good number of others that I got from breeding, wild encounters, or even some from trades and events, but those were all purposefully sought out and there's nothing to really remark about them other than, like, "got 'em!".
