Apparently no one has mentioned Ruby yet so I will!
While Ruby looks like your generic white rabbit, she is actually albino! And her origin is based on the moon rabbit, an Asian folklore referencing to a figure of a rabbit on the moon holding some sort of mortar and pestle. That's why her interior is all space-y stuff. Her Jpn name is also Luna/Runa which supports her being based on the moon rabbit.

I just thought she was a villager whose theme you wouldn't know from the get-go, which makes her all the more interesting for me haha.

(Also, you know how peppy villagers mention walking the same distance as from Earth to the Moon? It always hit different when Ruby would say it because of her moon rabbit theme lol.)

But yeah, Spike's a unique golden boy as well and I do love his design

Also want to bring attention to Tiffany, who has a very... different design to almost all other villagers in the game. I know there are a few villagers that wear makeup but few I think have fishnets and gloves (Gigi also has gloves). I thought her design was referencing the obvious but the wiki mentions she might be inspired by Audry Hepburn in Breakfast at Tiffany's. Her amiibo card is also very sultry.
