Iron Man 2:

Okay, so <big>why</big> is Whiplash the main villain? What happened to the original plot of the Ten Rings, (the Mandarin). Whiplash was never the main badguy!!!

Because the people at Marvel were idiots and killed off Jean, Scott, and re-incarnated the professor, they seem to have stopped making X-Men movies that center around the future of X-Men. Instead, they're doing X-Men of the past, which is what X-Men: First Class is about.
X-Men: First Class is the story of the first and original team of Xavier's X-Men.

You knew it was coming, didn't you? Well, they've planned this for a while now. They've stopped script processing currently, because they can't decide on who the main villain should be. Right now, they're considering the Vulture, who's as threatening as a chair, for the main villain. Honestly, if Marvel didn't have a fetish with killing off main villains or characters, then we wouldn't have this problem. My opinion on who the main villains should be: The Lizard and Carnage. There was still some symbiote left with Dr. Connor, remember? Also, Dr. Connor was in all three of the movies so far, so he wouldn't be a bad choice. Another opinion: After the third movie, they should have let the franchise die. Why? They killed: Harry, Green Goblin, Sandman (not really dead, but kind of a good guy), Dr. Octopus, and Venom.

And I need to read the comics more. :< I think I'll snag some of the PSP ones.

The Mandarin is from the comic books. Though, the nickolodeon one is completely different from the actual comic. The mandarin was always Iron Man's main villain.

Yea. At least they're not making sequels. Probably Prequels. Like Star Wars. The last three X-Men, and the Wolverine, which will continue to First Class, and so on.
