I like to give my villagers saying that would either sound good at the end of a sentence ('right', 'or not', ...) or just silly sounds like 'niyaaah' or simply 'hihi'. But I think I gave Kabuki once 'buki' as a phrase because I was very creative at that moment.
That's exactly how my town is lol. All the cats say meow, although other villagers have taken that catchphrase too so even my wolf villagers say meow which can be funny.
i usually like to keep villagers' catchphrases original, unless it's something i really don't like.
his original catchphrase of meooo-OH is hilarious though, so i'd keep that xD
I've got kabuki in one town, can't remember what I have him saying.
I some times use Australian greetings, dunno why, just do. Or things like 'luv a duck'.
Or cockney rhyming slang (guess you have to be UK based to appreciate that one).
As he is a kabuki actor, maybe something to do with dance? hip hop bop, silly made up things, whatever.
