Ava is the one who sings ALL the time in my town. I like her but I’m willing to let her move just to see a new face.

my question is, will someone else take her place and start singing a lot? Or am I losing my one singer who loves to sing?

All villagers have a specific hobby, which means that they'll engage in that activity more often. Ava does have the Music hobby, which is why she sang so much.

While all villagers can do any activity, your other villagers are still less likely to sing than Ava. If you really miss the singing, you can try to find another villager with the same hobby.

I don't have any villagers with a music hobby. But if you place a radio by your plaza (or where your villagers usually loiter), they tend to stand there and just sing.
