I haven't tried it yet, but I believe you need to change Nintendo Switch profiles (Or create a new one if you only have one), and then start the game. Hope that helps

I think that's the way you do it, since you don't have a player selection screen

After making this post, I tried it out myself. You need to create a new profile in the Nintendo Switch settings, under the "Users" section. Launching the game as a different user lets you create a new character.
