I didn't even know they were a thing until now x)
Do different islands have different spawn rates? I didn't know that 
Anyway, I've only caught a few. One tip, in case you're used to them from ACNL- they look A LOT less yellow in this game. The first time I caught one I didn't recognize it!

In the very beginning of July I didn't see a single one. Last night I caught 3! When I'm running around doing errands it's kind of hard to slow down for them because from a distance they look like a regular black stag (like miyama stag) since their yellow body blends into the tree lol.
I caught my very first one today right after I started the game for the day. Was my last July bug I think. A few nights ago I spent TWO AND A HALF HOURS trying to conjure it and the giraffe stag on a stripped mystery island to no avail. Then I catch both within two minutes of each other randomly today. Stay strong!
Go to a Nook Mile island, pull every plant and cut down every tree except the palm trees. Break all the rocks. This forces the bugs to only spawn on the palm trees and ground. Keep scaring them away (or catch them if you want) until you get the bug you're looking for.
I was tired of not finding a scarab beetle on my island, so I did the above and had one within a half hour.
Yep that’s what I have been doing but only got lucky tonight!

It helps if you find Bamboo island. It's great for beetle farming. Other wise you can set up a beetle farm on your island by laying down sand paths and planting coconut trees on them. I've been farming them this way

All my players were able to catch the bug. Last night Flick was in town and each player sold 2 and Player 2 caught another one.
Walking Stick for 2 players and Cicada Shell for 2 players were the hard to find. Walking Stick has a low spawn time and are hard to see. Most caught bug was the Giant Stag. I remember those were hard to find in ACNL.
