Something like where you can do things more like a webpage (which you can do with email now, but support for HTML varies greatly between clients, Outlook being one of the worst, Mail being one of the best), but not requiring a normal person to have knowledge of HTML and CSS. Mail did this nicely with a template system starting with Mail version 3, but due to poor client support, it doesn't go through as nicely for other clients.
Anyways, I think there's some good ideas in Google Wave, but I'll need to check it out myself to see more features before I can really comment on it. From what I've seen so far, it looks more like Gmail with some new stuff, like email comments being separated, and collaborative-like features.
