I think either Trump Card (though nearly useless competitively), Ice Beam or Dragon Pulse. Honorable mention for Draco Meteor, Flash Cannon (dat DPP particle effect) and Aura Sphere.

I've always enjoyed a nice Psybeam. It's quite nice, may cause confusion. The animations were always nice except in R&S for GBA (worst psychic animations imo) and the sound is always pleasing.
