ive heard about them, but i dont know exactly what they are, how many, and how to tell what personality someone is

Each character has a personality. There are 8 personalities. Male villagers have four (cranky, lazy, jock, smug), and female villagers have four (snooty, normal, peppy, sisterly).
Cranky villagers will sometimes seem like they're much older than the rest of the villagers. Sometimes talking about back pain of standing too long, or being annoyed by other villagers, and being surprised if you have good taste in things or take initiative.
Lazy villagers are easy to figure out. They like talking about bugs in their house. Sometimes they'll mention that they feel sleepy.
Jock villagers tend to talk a lot of about muscles, working out, being confident.
Smug villagers will say something that comes off as rude, but then pretty much say they're joking with you. They even think highly of themselves.
I have no idea how snooty villagers act since I don't have one.
Normal villagers will be sweet to you.
Peppy villagers are very excited a lot of the time and will talk about being a star or something.
Sisterly villagers are kind of like normal in a way. I haven't really figured that one out yet.

thats so helpful! its easy enough to identify the lazys, jocks, and peppys (ive had tons), but its hard to identify someone when i first meet them...

To add onto this:
Lazies also talk about food a lot and act like little kids! Smugs have a lot of dialogue about being famous actors/filmmakers/social media influencers and sometimes sprinkle foreign words like “guten tag” and “buongiorno” into their sentences. They’re kinda like peppies in a way lol, who also talk a ton about being super famous pop stars.
Snooties... don’t seem very “snooty” anymore in NH to be honest. They’re more elegant and sophisticated and like things like fashion and shopping and say “darling”.
Normals are also known as sweet and they act very down-to-earth and like things like reading and cooking!
Sisterly villagers, also known as uchis, actually aren’t much like normals at all. They act very rebellious and mischievous and can be kinda blunt but still care about the player a lot, and also have a soft spot for growing flowers!
There is unfortunately no indication in game of what personality type each villager is, other than their dialogue. Seasoned veterans of the series can easily identify in this way, but until you become familiar with how each personality type speaks, there is no shame at all in referencing a list online to see who is what.
