Does reset trick work on special visitors like Gracie?

No.

When you are signed on as a new character, you can't see special characters like gracie. Also, they are set for the whole week when you pass 6am on Sunday, so I think it would make any difference anyway.

Yes. You pass the first fashion check, set the time to 5:59 on the same day, fast forward and she will have a different theme, and it will count as two different fashion checks. That's how I did it, anyway.
