sometimes, villagers will check up on you again and ask if your answer is still up to date. you can change it to your liking, but as far as i'm aware, isabelle only resets catchphrases. so you'll just have to get a lucky conversation with a villager to be able to change your answer.
edit: and yes, other villagers do know even if your answer is personalized
If you're asking about something like, "So and so likes action movies," then yes, other villagers will also know about that. If they ask or say they heard that you like action movies, and you deny that you do, then you'll be able to change your answer with them.

to your other questions, different villager personalities have no effect on what they ask about you, whether it's a jock or a snooty, they don't have a set question based off their personality.
villagers will remember people you've visited/ who've visited you regardless of them deleting their island or you deleting and readding their friend code. it was like this in new leaf too, but in new horizons they only really mention the people you've been in contact with for a short time afterwards. it would be very rare for them to mention a person you haven't met in over a week.

Alas, I don't have any beyond just talking to your villagers 4-5 times a day and hoping for the best. It seems pretty rare that they talk about your rumors.
Yeah seems pretty rare that they bring it up. One of my villagers will mention something and I'm like "oh, oh yeah..."
Also, they remember if you give preset answers too, I found out today. I must have been asked about sports at one point cuz my neighbor was like "let me get this right, you really don't like ANY sports at all?" And then I had the options to agree or, presumably, change my answer.

I'm just saying the villager's reaction is that they don't know what water is because Nintendo did a poor job handling the custom responses. Nintendo should have opted to have them know what you are talking about regardless of whether it's a real thing or not.

I was asking each villager about 10 times per day to find this dialog so I can edit my personalised answer and I finally got the right one: but in his sentence the villager told me the word without a capital letter so I think the game automatically transforms a capital letter into a lowercase letter so I’m wondering why you got the word “water” with a capital letter on your picture.
