I don't have a single species island but I've considered it many times. At various points through my play through I've had 4 cats, then after getting their photos / trading them away, I've gotten up to 5 squirrels. I would probably do a squirrel island if I ever had a second switch with a second island.
I don't think I could because I don't have 10 favourites of single species. I could do cat vilagers but it would be a one-time gimmick. I would have: Raymond, Ankha, Punchy, Kabuki, Tangy, Kid Cat, Rudy, Katt, Lolly and Kiki. Those are my favourite cats. Right now I could do an all personality island because I have 5 lazies. There are many lazy villager designs I like so its a possibility.

I'd love an all-sheep island but the thing is I'm too attached to Sherb and Tammi and there aren't any lazy or cranky sheep so I had to bag that idea... lol

Honestly I’ve heard more complaints about having too much of one personality over too much of one species. While I wouldn’t want a one personality town, I’d love to see one!

I don't have just one species on my island, but I do have only bird villagers (ostriches, songbirds, eagles, penguins, ducks, and chickens).
If I did have to do only one of these species though I would definitely go with ostriches or penguins!

There are 4 permanent villagers/dreamies and 3 aren't lazy. I don't have any amiibos so I don't want to let them go. I don't think I'll attempt it any time soon...I just moved in Coco for Halloween and I need all interactions with all my player characters but it may be a gimmick I'll try in the future.

No, but I might one day. Right now I have two of each animal! Two squirrels, two cats, two rabbits, two frogs, and two horses.

to be honest, i would not mind having an all deer island because I love the deers but I’m too attached to villagers of other types. also, the only species duplicates I have on my island currently are bob and felicity

Only by accident was my Island full of wolf villagers, but my intentions were originally to have a variety of villager species and swap out a few once I got bored, otherwise I feel the game would grow boring quicker. 
I plan to keep my favorites later once I collect all villager photos, sooo...probably not going to happen or at least any time soon.

Variety is the spice of life... and games!
For me, anyway, I like to see different animal species and different personality types. I also like seeing big and small residents interacting. The height difference makes it interesting. I say this because, recently, I had Maelle move in. Then I saw Rolf staring at her staring back at the plaza. An "Old Neighbour Meets New Neighbour" moment. I loved it!

I like multi species towns, or several specific species. One of my New Leaf towns was a bird town but it had all types of birds. If I had a single species island it would probably be full ducks, chickens, or dogs.
