Roscoe is awesome, it baffles me how underrated he is. The whites of his eyes turn yellow when he's angry, I just love villagers with color changing eyes.
Although for fairy tale theme Knox the knight is probably best suited but most people don't like chickens so don't feel obligated to put theme before personal preference, you're the one that has to live with whoever you choose.
