I just bought a new villager, but I don't have time to plot reset for him today, is it possible that I could go back and reset on the date I got him?

Assuming you got them yesterday, If you didn't go on your mayor already today (If you did his plot would be planted), you can go back to the day you got him and it'll be like today never happened so you'll still have an empty space until tomorrow.

Can it be like anytime in the day when I go back or before 6 am, because I'm pretty sure that's when a new day starts

It has to be after 6am on the day you got him.
If you TT a day BEFORE you got him or even a full year, it'll count as one day so a plot of land will be there.
So make sure it's on the correct day.
If you got him at 3am on the 12th, it still counts as the 11th so go to like the 11th at 1pm or w.e.
