Sometimes my villagers show me the first letter I ever sent them and I don't like how it reminds me of how much thought I put into them (which is not a lot) D: If I complain about their letters to Isabelle, will they stop showing that letter and then show the next letter I send them? ...or does something else happen? I remember complaining about a villager's language, thinking that it'd change their catchphrase to their default, but it got them to say "uh-huh" instead >: ...so now I'm wondering what exactly happens when you complain about letters.

That is a fantastic question and I wish I knew. But no matter what you say in a letter they'll always refer to it as your 'awkward days' (thanks Phoebe).
The complaining about clothing and the catchphrase changes it to a default thing, but not THEIR default. Complaining about a letter removes whatever they're showing, and the next letter you send them is indeed the one they show you.
I'm not sure if that works on letters that were sent to them in another town.
